Delightful Easter Cookies For Your Easter Party

All of us look forward to great Easter time. Baking cookies is one special way to honor the Easter holiday and the arrival of spring. Cookies in the shapes of Bunnies, Chicks and eggs are among the seasons favorites. Here is one spectacular recipe to try out this year:

Sandwich Egg Cookies : These delicious Easter sandwich egg cookies are easy to make and serve. They are sure to be loved by kids and adults alike. You can display these egg-shaped cookies in an Easter basket or small bowl on your Easter buffet.

Servings: 20 sandwich cookies

Ingredients:

  • 1 package (18 ounces) refrigerated sugar cookie dough
  • 1 cup plus 1 tablespoon powdered sugar, divided
  • ¼ cup all-purpose flour
  • 1 teaspoon almond extract
  • Blue or green food coloring
  • 1 package (3 ounces) cream cheese, softened
  • 1 tablespoon unsalted butter, softened
  • Red food coloring
  • ½ cup shredded sweetened coconut
  • Prepared colored decorating icings and decorating gels (optional)

Easter Cookies

Directions: Start with preheating the oven to 350°F. Greese two cookie sheets. Then remove dough from it’s wrapper and place it in a large bowl to reach room temperature. Then add 1 tablespoon powdered sugar, flour, almond extract and blue food coloring to dough in bowl and beat at medium speed until well blended and evenly colored. Then shape the dough in 40 (2-1/2-inch-long) egg shapes and place 2 inches apart on prepared cookie sheets. Bake them for 8 to 10 minutes or until edges are lightly browned. Cool on cookie sheets for 2 minutes and remove to wire racks and cool completely.

When ready to assemble and decorate, beat cream cheese, butter, remaining 1 cup of powdered sugar and red food coloring (tint pink) in a medium bowl with electric mixer at medium speed until smooth. Stir in coconut and spread pink filling on 20 cookies. Top with the remaining 20 cookies to make sandwiches. Decorate the tops of the cookie sandwiches as desired with colored icings and gels.
